“Eggowich” Eggo Waffle Eggwich with Strawberry and Blueberry Preserves

Starting the week off with a quick fix breakfast. Most of you are probably still recovering from the holiday weekend, so I will keep the recipes on the simple side for the beginning of the week.

Don’t knock it until you try it! Think of it as a cross between french toast, waffle and eggwich. This little sandwich delivers nothing but pure goodness to your tastebuds.

What You Need:

Two Special K Strawberry Waffles (or any waffle you like)

3 Egg Whites

Fruit Preserves (I used a combo of Strawberry, Blueberry and Mango Preserves)

1. Pop the waffles in the toaster to desired toast color.

2. Grease a pan and pre-heat. Once the pan is hot, pour in the 3 egg whites and cook like an omelette. Set aside.

3. Spread preserves on the two waffles and place the egg whites on one waffle. Place the second waffle on top and serve with a side of fruit.
